LUGAW -Filipino style Congee

Welcome to the first recipe of the BONAMÍ Cookbook!

The Lugaw (Congee) is a savory Filipino-style rice porridge, a delicious comfort food meal, cooked with love and topped with BONAMÍ Great Fried Anchovies.

Preparation time: 25 minutes

Cooking time: 1 hour


What you need:

  • 2 tablespoon vegetable oil - 1 medium size red onion (vertically sliced)

  • 4 cloves of garlic, chopped

  • 1 tablespoon fish sauce

  • 1 pinch of salt to taste

  • 1 pinch of ground black pepper to taste

  • 2 tablespoon julienned ginger - 1/2 cup uncooked long-grain rice

  • 4 cups of chicken stock

  • 2 portions of chicken breast (8 oz) cut into cubes


Garnishes on top:

  • 2 hard-boiled egg sliced into half

  • fried Tofu cut into cubes

  • Spring onion for garnish

  • Fried shallots for garnish - Fried garlic for garnish

  • 1 tablespoon of BONAMÍ Great Fried Anchovy for Garnish

  • 1 whole Calamansi (Philippine lime ) cut into half


How to cook the delicious Filipino-style Congee with BONAMÍ products:


  1. Heat the oil in a pot over medium heat and sauté onions, garlic, ginger, black pepper.

  2. Add the uncooked rice and chicken breast. Cook and stir until the chicken is not pink in the center. Add the fish sauce.

  3. Add the chicken stock and bring to a boil. Simmer on low for 30-45 minutes with continuous stirring until rice is cooked evenly.

  4. Add your favorite garnish, ours is the BONAMÍ Great Fried Anchovy!
